Old Fashioned Butter Cake – Searchlight
You will need:
2 cups all-purpose flour, sifted
1 1/4 cup sugar
1 tablespoon baking powder
1 teaspoon of salt
1/2 cup butter, softened
1 cup milk
1 teaspoon vanilla extract
Preheat oven to 350. Grease and flour two 8-inch x 2-inch baking pans and set aside. In a large bowl, sift together the flour, sugar, baking powder and salt. Add butter, milk and vanilla. Using a hand mixer, beat for 2 minutes, scraping down the sides of the bowl occasionally. Add the eggs and beat for another 2 minutes. Pour batter into prepared pans, dividing evenly between pans. To cook
30 to 35 minutes, or until toothpick inserted in center comes out clean.
Remove from oven. Cool in pans for
10 minutes, then invert cakes onto a cooling rack to cool completely. Frost with the chocolate frosting recipe attached.
“Perfectly Chocolatey” Chocolate Frosting
1 stick (1/2 cup) butter or margarine
2/ 3 cup cocoa
3 cups icing sugar
1/3 cup milk (plus a few more drops to get a nice consistency)
1 teaspoon of vanilla Melt the butter. Stir in cocoa. Add powdered sugar and milk alternately, beating on medium speed until smooth. Add more milk if needed. Stir in vanilla. Makes about 2 cups of frosting.
